Yeah, I totally agree with you on that. The way the light hits the window in the afternoon changes the whole feel of the room. I've been rearranging furniture for weeks trying to get it right. I've been experimenting with sourdough starter for about a month now and it's finally getting predictable. The first few loaves were pretty dense but the last one had a nice open crumb. I'm thinking about trying a different flour blend next time. Rye seems to give it more character. Have you ever baked with spelt? I hear it adds a nutty flavor. I also want to try a higher hydration dough but I'm a little nervous about handling it. My kitchen counter is warm so the fermentation moves fast. Timing is everything with this stuff. It's become a fun little ritual though. I usually mix the dough in the evening and let it rest overnight. The morning stretch-and-fold routine is oddly satisfying. Next weekend I might attempt a challah braid just for something different.
