we should take the trailhead early around 6am to avoid the afternoon heat and also because parking fills up fast at that lot from what I read. we can grab sandwiches from that deli on main street the night before and pack them in the cooler. I checked the weather and it looks clear all weekend so we shouldn't need rain gear but I will bring the light shell just in case. the loop is about 8 miles with 1200 feet of gain so it is moderate not too steep but steady. we can stop at the overlook for pictures around the midpoint. make sure your boots are broken in because there are some rocky sections near the creek. I will bring the first aid kit and extra water filtration just in case we need to refill at the stream. we can swing by the bakery on the way home if we are back by 3pm but if we run late we can skip it. let me know if you want to adjust the start time or bring anything else. I finally tried that roasting method you mentioned and it turned out better than I expected actually. the trick was letting the pan get hot in the oven first before adding the vegetables so they seared right away instead of steaming. I used a mix of carrots parsnips and sweet potatoes with rosemary and garlic and tossed them in olive oil with salt and pepper. the timing worked out at 400 degrees for about 35 minutes flipping halfway through. next time I think I will cut the pieces a bit more uniform because some of the smaller ones got a little too dark while the larger ones were still firm. the glaze you mentioned with honey and balsamic would be good but I did not have balsamic so I just used a splash of lemon juice at the end which gave it a nice brightness. I served it alongside roast chicken and it all came together well. the leftovers reheated nicely the next day too which is always a bonus. I will definitely use this method again for weeknight meals since it is easy and the clean up was minimal with just the sheet pan and a few prep bowls.
