Honestly, that hike was exactly what I needed last weekend. We started earl=
y, around 6 a.m., and the trail was still cool and damp from the overnight =
rain. The first two miles were mostly uphill through a dense pine forest, a=
nd the ground was carpeted with soft needles that muffled our footsteps. I =
remember stopping at a small stream crossing to catch my breath and just li=
sten to the water. The sun started breaking through the canopy around 8, ca=
sting long golden beams across the path. We saw a deer about a hundred yard=
s ahead-it stood perfectly still for a full minute before bounding away. Ar=
ound the three-mile mark, the trail opened up onto a rocky ridge with a pan=
oramic view of the valley below. A light breeze kept the bugs away, and we =
sat on a flat boulder eating trail mix and soaking it all in. The descent w=
as quicker but harder on the knees. By the time we reached the car, my legs=
were tired but my mind was completely refreshed. Definitely planning to go=
back next month and try the longer loop.

I spent last Saturday trying to perfect my grandmother's lasagna recipe. Sh=
e never wrote it down, so I've been going off memory and a few phone calls =
with my mom. First, I made the sauce from scratch - crushed tomatoes, garli=
c, basil, and a pinch of sugar. Let it simmer for about an hour while I pre=
pped the ricotta mixture. I used whole milk ricotta, an egg, parsley, and a=
generous amount of parmesan. The noodles I boiled just shy of al dente bec=
ause they cook more in the oven. Layering turned out to be the trickiest pa=
rt: sauce first, then noodles, then ricotta, mozzarella, and a sprinkle of =
pecorino. Repeat three times and finish with a final layer of sauce and che=
ese. I baked it covered at 375 for 45 minutes, then uncovered for another 1=
5 to get that golden, bubbly top. The house smelled incredible all afternoo=
n. Served it with a simple arugula salad and some crusty bread. Everyone we=
nt back for seconds, so I'd call it a success.
