Yeah I think the braising technique would work well for that chuck roast yo=
u mentioned. We tried it last weekend with a red wine base and it turned ou=
t incredibly tender. The key is keeping the temperature low enough around 3=
00 degrees and letting it go for at least three hours. I added some carrots=
 and celery about halfway through and they absorbed the liquid nicely. Next=
 time I might try adding a bit of tomato paste earlier in the process to de=
