I saw your message about the recipe swap - honestly, I think the sourdough =
starter is a great idea but maybe start with a small batch first so you don=
't end up with too much discard. My sister tried that last month and she wa=
s giving bags of starter to everyone on the block. I still have some in my =
freezer actually. The key is to feed it at the same time every day and keep=
it somewhere that isn't too drafty. I used a spot above the fridge and it =
worked fine. For the first week just be patient and don't toss it if it sme=
lls a little funky the first few days - that's normal. Let me know if you w=
ant me to send you the feeding schedule I used. I also found a great no-kne=
ad loaf recipe that uses almost no effort and comes out with a really nice =
crust. The longer you let it cold proof in the fridge the better the flavor=
gets. Anyway just my two cents on the whole thing. Hope it helps.

Hey thanks for the note about the hiking trail recommendations - I was actu=
ally just talking about this with a friend who did the Rim-to-Rim at the Gr=
and Canyon last spring and she said the North Kaibab trail is incredible bu=
t you really need to start before sunrise to avoid the midday heat. She car=
ried three liters of water and still ran out a mile from the top. I've been=
looking at doing something in the Pacific Northwest instead maybe the Olym=
pic National Park area because I hear the old-growth forests are just massi=
ve and there's this one spot called the Hoh Rain Forest that looks unreal i=
n photos. Have you ever been out there? I was thinking late September might=
be good because the crowds thin out after Labor Day. Also my brother just =
got a new tent that sets up in like 90 seconds which honestly feels like ch=
eating compared to the one I have that takes twenty minutes and a lot of pa=
tience. Anyway if you have any must-see spots out west let me know. Always =
looking for ideas.
