The key thing with sourdough is that the hydration level really determines =
how the dough behaves. If your starter is at 100% hydration you want to adj=
ust your water accordingly. I usually drop the water by about 20 grams when=
I add a new flour type. The temperature of your kitchen also plays a role =
in the rise time. Warmer spaces will ferment faster so you might need to re=
duce the bulk fermentation by an hour or two. I find that using a thermomet=
er to check the dough temperature helps maintain consistency. The other fac=
tor is the protein content of your flour. Bread flour with higher protein g=
ives more structure while all-purpose makes a softer crumb. You could try a=
blend of both to see what texture you prefer. The stretch and fold techniq=
ue every 30 minutes for the first two hours really builds strength without =
overworking the dough.

AAA Premier Roadside Support =E2=80=A2 Regional Courtesy Kit Program

Regarding the shelving layout I measured the wall space and the best config=
uration would be two units side by side with a gap of about 18 inches betwe=
en them. The taller unit should go on the left since the window is on the r=
ight side and you want to maximize natural light hitting the work surface. =
I found that adjustable shelves work better than fixed ones because you can=
customize the spacing for different tool heights. The depth of 16 inches i=
s enough for most power tools and storage bins. For the pegboard I would mo=
unt it above the workbench about 6 inches from the back edge. That gives yo=
u room to hang frequently used items while keeping the bench clear. The lig=
hting situation could be improved with a pair of LED strips under the upper=
cabinets. They provide shadow-free illumination across the whole surface.
